Tools for when a recipe does not match your pan, your cup or the number of people at the table. Convert, scale, then start a timer.
When a recipe fails to reproduce, the cause is usually one of three things: the units differ, the servings differ, or the timing differs. This group handles each of them — converting spoons and cups to grams, rescaling a four-serving recipe to three, and running several pot timers at once.
The mismatch is largest with recipes from other countries. Cup volumes are not identical everywhere, oven temperatures split between Fahrenheit and Celsius, and ingredients that share a name can behave differently.
Converting «one cup of flour» to grams requires the density of flour. Water is convenient — one millilitre is one gram — but a cup of flour can vary by more than twenty percent depending on how it was filled. Sifted and spooned is a different quantity from scooped and packed.
Sugar, salt, butter and honey each have their own density, which is why the converter here asks which ingredient rather than applying a single cup-to-gram factor.
For baking, where ratios decide the outcome, use a scale from the start. Volume measurement is convenient but not reproducible. The converter is a bridge for when there is no scale, or when the recipe is written in units you do not use.
Ingredient quantities scale with servings: doubling from two to four doubles the ingredients. Cooking time and heat do not. Double the contents of a pan and the extra moisture turns a sauté into a steam; double the volume of a roast and the centre takes disproportionately longer to come up to temperature.
Salt and spice need care too. Doubled, salt and heat are usually perceived as more than doubled, so it is safer to add about 1.5× and correct at the end.
For anything where consistency matters, hold back some of the liquid and add it gradually — flour's moisture content changes with the season and with storage.
Eggs are the clearest case. What separates soft from hard is not temperature but time and starting condition. An egg straight from the fridge and a room-temperature egg boiled for the same duration give different results, and starting in cold water differs from lowering into boiling water.
Pasta and vegetables behave the same way. Package times assume a standard thickness, a standard burner and a standard volume of water, so it is worth checking about thirty seconds early and tasting.
At altitude water boils below 100 °C, so «boiling» is cooler than it is at sea level and everything takes longer.
Cooking gets hard not because one thing is difficult but because several things have to finish at the same moment. Rice, a simmering soup and a blanched vegetable all take different times, yet they reach the table together.
So the timer here runs multiple counts side by side and lets you label each one. «Pasta 7 min» and «Greens 3 min» mean the alarm tells you what finished, not just that something did.
Planning backwards helps: fix the serving time, subtract each dish's duration, and you have the start times.
They do not supply recipes and do not judge food safety or allergens. The boiling tables are starting points based on typical sizes and conditions; real conditions need adjustment.
In particular, safe cooking of meat is decided by internal temperature, not elapsed time. There is no thermometer on this site, so use one where safety is involved.
